Pastitsio (Greek Lasagne)

A delectable Greek pasta bake with flavour-packed layers of creamy penne pasta, pork and veal ragu flavoured with red wine and delicately spiced with cinnamon and allspice. Enriched with the wonderful smokey flavour of freshly chargrilled capsicum and topped off with a velvety bechamel sauce with parmesan and vintage cheddar baked together to form a wholesome baked pasta that is hard to pass.

This is one of my families favourite pasta bakes. It freezes and cooks well and only improves in flavour. Its also been a favourite of mine when I take a plate along to someone's house. There isn't any leftovers and many ask for the recipe.

To reheat: Defrost in the fridge. Cook in a preheated 190C fan forced oven for 35-40 minutes or until hot in the center and golden on top.
