This soup is packed full of orange vegetables which have been roasted for a boost in flavour. Finished with tamari and maple syrup and ginger makes for a nice twist to the usual flavours.
I came up with this soup purely for it's colour! Packed full of beta-carotenes and delicious. This soup is so good that all the pumpkin dis-likers love it! It's vegan and¬¨‚Ä†great for those that are gluten-sensitive. (Not suitable for coeliacs)
Reheating instructions:¬¨‚Ä†Defrost in fridge overnight. Reheat in microwave 2min, stir, heat another 3min. Check that it's heated through, you may need to heat a further few minutes depending on your microwave strength.
