My Opa was a dutch pastry chef. We used to visit him regularly on weekends as kids and whenever we came over, he always had something sitting there waiting for us. I fondly remember his shortbread, sitting in a little tin on the coffee table. Opa was baking right up until the day he passed away, well into his 90's, so as a tribute to him and also for the nostalgia, I also make his shortbread recipe on a regular basis.
They contain the normal butter, sugar, flour ratio but are made completely by hand with all organic ingredients, sprinkled with raw sugar and fork pressed... plus a little bit of lemon rind to remind me of Opa's back garden, bursting with lemon trees.
