My Opa was a dutch pastry chef. We used to visit him regularly on weekends as kids and whenever we came over, he always had something sitting there waiting for us. I fondly remember his shortbread, sitting in a little tin on the coffee table. Opa was baking right up until the day he passed away, well into his 90's, so as a tribute to him and also for the nostalgia, I also make his shortbread recipe on a regular basis.¬¨‚Ä†
They contain the normal butter, sugar, flour ratio but are made completely by hand with all organic ingredients, sprinkled with raw sugar and fork pressed... plus a little bit of lemon rind to remind me of Opa's back garden, bursting with lemon trees.
In my mind there's nothing better than using seasonal, organic or free range ingredients to create delicious and nutritious food; this is what I strive to do both at home and for others. My food style is mixed, having travelled to many countries and sampling lots of interesting food, I tend to take inspiration from these experiences as a whole rather than pinpoint a specific cuisine, as long as it's tasty and makes you feel good!
