Here's a vegetarian meal where you won't even miss the meat! With loads of flavour and only the best organic ingredients, why wouldn't you indulge in meat free Monday? My Vegetarian Chilli Con Carne Bowl is served on a bed of biodynamic brown rice and comes with roasted sweet potato wedges, sour cream and guacamole.
To store and re-heat: The Chilli Con Carne freezes really well but the other components will have to be stored in the fridge. To re-heat simply bring the chilli con carne back to piping hot slowly in a pan or in the microwave. The rice and sweet potato wedges can be re-heated in the microwave.
