Mexican Chicken and Beans

Made with authentic mexican flavours and slow cooked chicken thighs, beans and brown rice.

I have a love of Mexican food and love to cook it for my family. I created this dish to try and re-create the Mexican that I love to go out for. My sister, father and children always ask for second helpings. It is great on its own or a good base for tacos or fajitas. Eat with sour cream, guacamole and salad.

Contains: Milk and Milk Products, Sesame seeds and sesame seed products 

Ingredients: Chicken thighs, tomatoes, garlic, taco seasoning (Paprika, Rice flour, salt, onion, tomato powder, cumin, sugar, jalapenos 1.5%, oregano, chilli 1%, food acid citric, may contain sesame seeds), grated cheese, salt, pepper, red kidney beans, pinto beans, black beans, brown rice.

Reheating Instructions: Microwave on high for 3 mins, take out and stir, reheat for another 2 mins if required.

I developed a love of cooking through watching my mum make old family favourites such as Sunday roast, spaghetti bolognese and meatloaf. She always had special little tricks and family secrets to make the meals extra tasty. She passed away a few years ago so these memories are very treasured.

I enjoy cooking homely 'comfort' food but in a healthy way. I love french and Italian food. I also love cooking Indian and a range of other cuisines. Anything that feeds the body and the soul.
