This complete dish consists of a fricassee of chicken with homemade pasta.
The chicken is diced and cooked in a broth and set aside. Then, I brown the onions with a little butter and the fresh mushrooms which I incorporate into the chicken. I prepare my bechamel and add it to the chicken with the seasonings. For the spaetzle, I mix the flour, the eggs, the milk and the seasoning. The dough is then poured into my special utensil to form the spaetzle which I cook in a vegetable broth at first and then I finish by browning them in a pan with a little butter and the seasoning.
“Les Bouchées à la reine” is a typical dish from the North East of France. The region where I come from and where I grew up.
I offer you my version of this famous dish, delicious and suitable for the whole family and at any time. Children love spaetzle because they are pasta, of course! It takes a long time to prepare this dish, but it's worth it! For any occasion, it suits all tastes. I would like to make you discover it and I hope you will enjoy it!

In France, I was a commercial engineer but the pleasure of cooking was lacking so I created a catering company where I cooked from home. It was a great experience with satisfied customers. In Sydney for two and a half years, I work as a cook in a Japanese restaurant and also as a French teacher occasionally and can’t wait to cook for you too. *** BON APPÉTIT ! ***
