Paella is the best known dish of Spanish gastronomy. It is characterised by being a dry rice where all the flavours provided in its production process are integrated into the rice grains, so the rice is the star of the dish and is not an accompaniment to the other ingredients. The importance of preparing a good broth and selecting top quality produce is key to achieving the explosion of flavour in each bite of rice. I have cooked Paella's since childhood, watching how my parents made it, and now making it myself.
