Masala Vada is a delicious snack made of coarsely ground split chickpeas, onions, spices (fennel, dry red chillies) and salt. It's a quintessential South Indian tea time snack.
My Amma makes the most delicious Masala Vada's and I have fond memories enjoying them with her over a hot cup of masala chai. Masala Vada with piping hot chai is a must on a rainy day!

🍴 x6 Masala Vadas per serving (320g)
Preparation (Cook from frozen):
Step 1 - Preheat your oven to 200°C
Step 2 - Bake vadas for 15-20 mins until the outer layer is crunchy
Step 3 - Heat chutney in microwave (30-45sec), and add a drop of water.
🍅 Best served with tomato chutney (provided) and a cup of hot chai (tea)
🌶 This meal has a spice rating of "mild"
Ingredients:
Masala Vadas: Split chickpeas, Onion, Dried red chillies, Fennel seeds, Coriander, Oil, Asafoetida, Salt
Chutney: Tomato, Onion, garlic, tamarind, lentils (Black gram, split chickpea), red chillies, mustard, curry leaves, salt and oil.
Contains: Cereals containing gluten and their products including wheat, rye, barley, oats, spelt.

I love to explore vegetarian and vegan recipes from various cuisines. Apart from Indian which is what I cook on a regular basis, my favourites are Moroccan and Turkish as they are similar to Indian cuisine with the addition of various spices. Although I like to follow the traditional recipes as it’s been passed down to me, I like to add my own twist to certain dishes. I love to experiment with new ingredients such as farro, teff, buckwheat etc. There have been many a times where I have bought an ingredient and then looked for ways to cook it.
