The chicken is spice rubbed and browned then oven baked with the spices and lime and finished off with coconut cream and fresh lime and coriander. It's Keto, Paleo and can be served with rice or cauliflower rice or even a mash.
This dish is a family favourite and also much loved by my customers - even those who go out on a limb to order - now they order double when they see it on the menu. Oven baked - tender chicken with just the right amount of spices and flavour.
Ingredients: Chicken, onion, garlic, lime, chili powder, paprika, cumin, stock, coconut cream, fresh coriander, coconut oil, salt, pepper
Reheating Instructions: Defrost in refrigerator overnight and reheat in a moderate oven for 30 mins or until heated through. Different ovens may vary on timing.
