Italian Tomato and Sweet Basil Soup

Size Guide

This delightful soup is packed full of tomatoes, basil, potatoes and immune boosting garlic and then blended until smooth. Pepper adds a nice heat that will warm you up from the inside. A perfect and healthy soup made from scratch with no nasties! Best served with some parmesan and crusty bread.

Ingredients: tomatoes. potato, basil leaves, garlic, olive oil, vegetable stock, salt, pepper, brown sugar

Reheating: Defrost first in the microwave or in the fridge overnight. Heat in microwave on high for 4 mins, stir then heat for a further 2-3 mins

I developed a love of cooking through watching my mum make old family favourites such as Sunday roast, spaghetti bolognese and meatloaf. She always had special little tricks and family secrets to make the meals extra tasty. She passed away a few years ago so these memories are very treasured.

I enjoy cooking homely 'comfort' food but in a healthy way. I love french and Italian food. I also love cooking Indian and a range of other cuisines. Anything that feeds the body and the soul.
