Su's Honey Glazed Eggplant (Vg)

A delicious sweet and savoury dish with baked eggplants. This is my take on a fried and pickled eggplant dish I used to love as a child growing up in Sri Lanka, but I have adapted it to suit modern day ingredients and to make it healthier by baking (not frying) the eggplants. I hope you enjoy it!

Single serve - serves 1 on its own or more as part of a shared meal.

    Preparation:
    Step 1 - Defrost overnight in your fridge.
    Step 2 -Microwave for 3 minutes, give it a stir
    Step 3 - Microwave for another 2mins

    Ingredients: Eggplant, Honey, Onions, Olive oil, Garlic, Turmeric, Salt, Apple cider vinegar, Pepper.
