Ghee rice is a classic side dish for meals in Kerala and the South of India.
Ghee rice is made by first frying basmati rice in ghee, then adding water with a few pods of green cardamom and a stick of cinnamon thrown in. The rice is cooked by absorption and is fluffy and fragrant when done right, and finally topped with sultanas and thinly sliced onions fried in ghee.

Ingredients: Ghee, basmati rice, green cardamom, cinnamon, salt, onions, sultanas
To Reheat: Sprinkle a few drops of water over the rice and then cover and microwave your rice until piping hot.
