Filipino Style Grilled Chicken (Inasal)

A Chicken Maryland is marinated in seasoned vinegar that's traditionally cooked over hot coals and basted with annatto oil. Chicken Inasal is a famous dish from my hometown, Bacolod. Ever since moving to Sydney, I have been craving for it and we can't seem to find a restaurant that does it with the authentic Bacolod flavours. This is the first thing I always make people try when they come visit me back home. You definitely cannot call this dish "Inasal" without the annatto oil. Chicken Inasal is a famous dish from my hometown, Bacolod.   • Preparation:
    Step 1 - Defrost Overnight
    Step 2 - Preheat Oven 250°C
    Step 3 - Place skin up, in centre of the rack
    Step 4 - Bake 10mins
    Step 5 - Brush both sides with annatto oil
    Step 6 - Bake 8mins

    You will need Annatto Oil to heat this meal

    🍙 Best served with steam rice - get yours here
    🌮 Garnish with diced red onions, sliced jalapenos, lime wedge and/or spring onions
