The secret to my Chilli Con Carne lies in the preparation of my own spice mix made with roasted oregano, paprika, cumin, nutmeg, coriander seeds and chilli powder. I then sauté onion and capsicum until caramelised which enriches the flavour of the chilli. I mash the mince, and combine the remaining ingredients including one which shall remain secret. This mix is left to simmer for a long time so all flavours combine and absorb to give you the ultimate, very more-ish Chilli Con Carne sensation!
My sister taught me how to make a basic chilli, using a ready made spice mix, before I went off to university many years ago. A good chilli in those days was a must-have staple in shared student houses, and the person who could make it well received many kudos. Apparently I made it well! Over the years I refined the recipe and constructed my own spice mix greatly encouraged by my kids and family

Preparation:
Step 1 - Defrost in your fridge overnight
Step 2 - Microwave for 60 seconds and stir
Step 3 - Microwave for 60 seconds or until heated through

Ingredients: Beef mince, pork mince, onions, capsicum, kidney beans, white beans, black beans, cherry tomatoes, tomato paste, beef stock, salt, spices.

The food I cook is always full of flavour, based on traditional North European recipes, but also incorporating Mediterranean and Asian styles. Hearty comfort foods based on childhood memories. I lean towards fragrant curries, slow cooked meats, chunky soups, and traditional meals with a twist.
For me cooking is a celebration. It reminds me of how rich and lucky we all really are, being able to make foods that others can savour, and make us forget the difficulties in life for a while.
I'm usually a little wary of chilli and although I love Mexican food, just do not cope well with strong chilli so was a little bit tentative at first. Absolutely no worries with this dish, it had the perfect blend of spice to give it some heat, but not bring tears to my eyes. A generous serving and all con carne, no rice. I only needed half of the dish and will use the rest tomorrow over a baked potato with sour cream and cheese. Would definitely order again.
