Chickpea, Lentil and Sweet Potato Curry (V)

When my food market customers asked me for a Vegan curry, I was determined to work on a recipe that would please even a carnivore. Result: I ate this curry 3 times in 24 hours, so I'd say that was a success! Chick peas, red and green lentils, sweet potato, seasonal vegetables from our SOLACE Kitchen organic garden are combined with a secret blend of herbs spices to make a delish curry that even a meat-lover will love.

  • Preparation:
    Step 1 - Defrost in microwave or fridge overnight
    Step 2 - Microwave until hot (approx 4mins)

Spicy curry - great to warm you up

I liked this curry. It was definitely spicy - too spicy for my 11 and 15 year old kids, which was a shame for me as I’d like to have it again. Liked the combination of chickpeas, lentils, sweet potato. For me I’d love the chickpeas to be a little softer, otherwise spot on.
