This is a delicate tasting meal perfect for children and adults alike. A very morish meal starting with a bechamel sauce with that also includes crushed garlic, wholemeal mustard pinch of nutmeg salt & pepper with a lovely ricotta cheese mixed through. After that I cook chicken mince with onion, garlic, carrot, sweet potato and zucchini. Once all is cooked I layer everything including lasagna sheets and a beautiful thinly sliced pumpkin as part of the layers. This was one of my most popular with 40+ of my lovely childcare kids!

Ingredients: Chicken mince, milk, flour, salt pepper, nutmeg, garlic onion, wholemeal mustard, ricotta cheese, parmesan cheese, pumpkin, zucchini, carrot, sweet potato , lasagna pasta sheets
Reheating Instructions: Defrost in fridge overnight or cook from frozen. If defrosted bake for 30minutes in a 200°c oven 200°c or for 10 minutes in microwave (decant into microwave safe container). If cooking from frozen, bake in a 180 degree heated oven for 45 mins - 1 hour or until heated through.

My first love of food started very young as my mum worked night shift and dad worked all day, there was never a constant of meals and lunches so I just started cooking myself and my sister. My parents were very old school meat and 3 frozen veg, my worst nightmare now! I've always love spices, curries, stews, casseroles… lots of savoury yummy tasty food.
My favourite books are cooking books I have them everywhere in every room! Herbs & spices are the key to most dishes in my repertoire, I’ve always been a cook who cooks by taste and testing. I feel you can never have to many vegetables, I love Anthony Bourdain as a cook and traveller, world food makes me so happy.
I have worked in cafes and take away shops since I was 12, from then I was a carer for 10 years, catering for the elderly and making sure they are getting healthy hearty meals everyday which was so important to me. Moving then into being a childcare cook for 3 years in between having my 4 children. Childcare cooking taught me to cook in bulk for 40 -50 children a day including cooking extra for time poor busy parents to take home. For me, Foodst is the essence of what I love about cooking and how I am used to cooking, I want to share my food and help others.
