Butter Chicken

Whenever anyone talks of Indian curries, the most common dish people refer to is Butter Chicken. Butter Chicken is the unofficial Indian National Dish, and there is good reason for it. This is a Masterchef Inspired twist on butter chicken and when I made this recipe for the first time, it was an instant hit with my wife and kids.

The chicken is marinated overnight in a blend of mild spices and then grilled on a barbecue. The sauce is a silky smooth tomato based gravy with onion, ginger, garlic and other Indian spices which is then smoked with live charcoal. The dish can be eaten with the sauce and grilled chicken separately or with the grilled chicken dunked into the sauce. The chicken is so tender that it almost melts in the mouth.  This is not your run-of-the-mill takeaway butter chicken - it's a delicately crafted masterpiece that will have you hooked from the minute you taste it!

Re-heating instructions: Defrost overnight in the fridge or by using the defrost function on your microwave. Then, very gently re-heat the curry until piping hot.

Serving Suggestion: Serve with steamed rice or fried rice (click the links to purchase) and a side of vegetables. (Rice, chilli's and vegetables are not included)

My passion for food has come from my mother, she is a great cook and has won many awards for cooking in India. When I was small, around 15 or 16 years of age, I used to type out her recipes on a typewriter so that she could mail them to the magazines for competitions.

Once when she was not there, I looked up her recipe book and made chilli chicken and fried rice and I was thrilled at my achievement. That ignited my passion for cooking. Since then I have always experimented with food. I am not limited to Indian cooking, I also cook Asian, Mediterranean, Italian, in fact I am big fan of Jamie Oliver and have cooked so many of his recipes….watch out for my Jamie Oliver specials!

I love to cook because I feel you can be so creative with simple things available, forget the recipes, forget the complex processes, just take whatever you have and make whatever you want to make. If you believe in it you will come up with a dish. I have an education in hospitality where I formalised my passion for cooking. But later I changed to an IT Career in Hospitality and limited my passion to the home front. I can’t wait to share my passion and creation with others in the community.

Fabulous food!

We had this delicious meal earlier this week and enjoyed every mouthful. The portion sizes were perfect for 2 and the flavours were fabulous. The sauce was incredible, the chicken was tender, the rice was a treat and the chillies had heat and cool in perfect balance. Will be ordering this again!


Absolutely delicious! Full of flavour and a great balance. So nice to have a night off cooking!!
