This is a traditional family favourite that everyone will love!
I start with a ' soffritto' (onion, celery, carrots and garlic) sautéd in olive oil until tender and lightly caramelised. I then remove the soffritto and brown the beef mince before deglazing with red wine. The sofritto is returned to the pan along with tomatoes, passata, beef stock and oregano where it will simmer for 2-3 hrs to allow the flavours to blend and the sauce reduce to a succulent and flavoursome meat sauce. Perfect over you favourite pasta - mine is using a thin spaghetti! Garnish with parmesan cheese and fresh basil if desired. (meat sauce only - pasta not included)
Ingredients: Beef mince, diced tomatoes, tomato passata, beef stock, red wine, onion, carrot, celery, garlic, oregano, sugar, salt, pepper, olive oil
Reheating instructions: Defrost overnight in the fridge then reheat in a saucepan over medium heat or in the microwave on 50% power until piping hot. Toss through al dente cooked pasta and garnish with freshly grated parmesan and basil leaves if desired. Serve with fresh crusty bread and a crisp green salad (not included).
