This is a mild Indian beef curry with potato and spinach
My husband is half Indian and loves curry made from scratch. I love to make traditional Indian curries but have added extra vegetables to make it even healthier. Enjoyed by my whole family. Serve with salad, natural yogurt and naan.
Ingredients: Beef, potatoes, spinach, basmati rice, garlic, onions, chili, ginger, olive oil, coriander powder, cumin powder, turmeric powder, beef stock, tomato paste
Reheating Instructions: Cook from frozen in the microwave on high for 6 mins, take out and stir then heat for an extra 2 mins or as required.

I developed a love of cooking through watching my mum make old family favourites such as Sunday roast, spaghetti bolognese and meatloaf. She always had special little tricks and family secrets to make the meals extra tasty. She passed away a few years ago so these memories are very treasured.
