Baked mixed Berry Cheesecake with spiced ginger base

What is Christmas without a cheesecake? This beautiful baked cheesecake is extra special with the addition of baked in mixed berries. The ginger biscuit crumb base adds a festive flare and contains gluten free ingredients.

Serves 8

Ingredients:

Cheesecake: Cream cheese, eggs, icing sugar, vanilla bean paste, mixed berries

Biscuit base: Gluten free flour (Tapioca, Chickpea, Potato, Rice), Raw Sugar, Treacle, Vegetable Shortening [(Palm Oil, Antioxidant(Vit E)], Ginger Powder (4%), Golden Syrup, Guar Gum, Xanthum Gum, Raising Agent - Sodium Bicarbonate, Salt. 

*Although no gluten products have been used in this cake this is not suitable for coeliacs.

Contains: Eggs, Milk and Milk Products
