zz Apple Brined Pork Loin Chop with Puy Lentils

Stage one - Brine the loin chop in apple to add flavour and succulence. Stage two - cook sous vide to medium. Stage Three - sear a golden crust. Juicy and tender this is the best way I have found to serve a Pork Loin Chop that is packed with flavour. Paired with roasted apple slices with beetroot for earthiness and a serve of Puy Lentils to finish. Comes with a free gift from my friends Hunter Valley vineyard
