Who doesn't like some mid week mexican?
For this recipe, I use the base of my mexican chilli bowl, add free range shredded chicken and wrap around some flour tortillas, pour over chopped tomatoes and grate cheddar. With lots of yummy beans and veg along with mexican spices, what's not to love?

Ingredients: Free range chicken, onion, garlic, carrot, celery, mushrooms, capsicum, zucchini, kidney beans, chickpeas, lentils, black beans, tinned tomatoes, tomato paste, veg stock, oregano, cumin, coriander, smoked paprika, tabasco, chilli, salt, pepper, cheddar, flour tortillas
Step 1 - Defrost Overnight
Step 2 - Preheat Oven 180°C
Step 3 - Remove Cover
Step 4- Bake for 11mins
Cholé is the Punjabi name for what in the rest of India is known as Kabuli chana while the rest of the world calls it Garbanzo beans or chickpeas!
For this particular preparation, white chickpeas are soaked overnight to rehydrate before cooking it in a gravy made with onions, ginger garlic paste and tomatoes. What makes it special is the addition of a special blend of spices, known as the cholé masala which goes in apart from the usual basic spices used for Indian cooking.

Ingredients: Chick peas,Onions,Tomato,Ginger & Garlic paste,Whole spices (Cinnamon, bay leaf, black cardamom, dried fenugreek leaves),Powdered spices (turmeric, red chilli, Coriander, garam masala, cholé masala), Sunflower oil andSalt.
Reheating Instructions: ideally unfreeze overnight in the fridge, then microwave medium heat for 2-3 mins. Alternatively you can pan heat your meal by adding 2 table spoons of hot water, covering and let it simmer for 2 -3 mins.
Chicken breast is stir fried in a rich, spicy, garlic and chilli sauce with green beans and fragrant basil leaves.
Pad Krapow is one of the most popular Thai street food dishes of all time. In Thailand we would have this dish any day of the week as it is so flavoursome. There are so many versions of Pad Krapow. You'll find originally in Thailand they will cook with mince and it's not very saucy however I love the sauce and mix it through the rice so this is my version of Pad Krapow which has balance of all the flavour and not too spicy as I can't handle it very well myself. Hope you enjoy it.

To Reheat: Defrost in fridge overnight and then microwave for 2-3 mins before serving, or defrost in microwave for 5 mins until throughly hot.

Here's to old classics! I remembered this dish from when my mum used to make it for us when we were kids and I hadn't made it for years!!! So delicious and great for a meat free meal to break up the week. The cannelloni filling is a flavoursome mix of cheeses and spinach and the tomato sauce is home made for that special touch. I didn't tell my husband what it was and that there was no meat in in and he almost didn't believe me!

Ingredients: Olive oil, garlic, onion, tomato passata, ricotta cheese, parmesan cheese, cheddar cheese, nutmeg, spinach, egg, pasta, salt, pepper, basil, italian herbs, chilli flakes
Re-heating Instructions: Defrost in the fridge overnight. Bake in oven on 180 deg for 25 mins covered, then uncover and bake for a further 10-15 mins until cheese is starting to brown and is bubbling
