Michelle's Vegetarian Enchiladas (Vg)

Feast on Michelle's easy, veggie-packed Enchiladas, where Mexican cuisine meets the comfort of homemade meals.

"I use the freshest vegetables, beans and a homemade Mexican spice mix that I then carefully wrap in soft flour tortillas and top with chopped tomatoes and grated cheddar cheese."

Simply bake and serve for a healthy, vegetarian premade meal. It's the mightiest of Mexican feasts, minus the meat!

  • 🍴 Single serve contains 1 tortilla, Double = 3 & Family = 6

    Preparation:
    Step 1 - Defrost in fridge overnight
    Step 2 - Remove Lid, cover with Foil
    Step 3 - Bake 10-12mins in oven 180°C
    Step 4 - Remove Foil, bake a further 15mins (until golden brown)

    🥑 Best served with Guacamole and sour cream
