The beans are soaked overnight and then pressure cooked in a traditional onion and tomato gravy. A tempering of whole spices like Bay leaf & black cardamom and freshly chopped coriander is what starts the entire process. Rajma is quintessentially a Punjabi dish and is the regional speciality belonging to the northern parts of India. It is famously paired with steamed rice and "rajma chawal" is a much loved dish in India as well as Nepal.
