Anushree's Masala Curry (V)

Masala curry is a dish from the state of Kerala, in the south of India. Traditionally this preparation is called a 'Kadala curry'. To make this meal, the Tyson chickpeas are soaked overnight and then boiled in salt water. The gravy is made out of a fresh, wet masala that's made by slow roasting grated fresh coconut, coriander seeds and dry red chillies in coconut oil. This recipe has been passed on over 3 generations and is a combination of Indian cooking styles. Indian food is very regional in nature and the climatic conditions influence the preparation/recipe of the dishes.

Preparation:
Step 1 - Defrost in Microwave or fridge overnight
Step 2 - Microwave until hot (approx - 2mins)
(Once reheated, to be consumed within the day)

Ingredients: Tyson chickpea, grated coconut & coconut milk, coconut oil, sunflower oil, onions, tomato, ginger & garlic paste, whole spices (fennel seeds, black cardamom, bay leaf), wet masala (grated coconut, coriander seeds, whole dry chillies), spice powder (turmeric, garam masala), salt, coconut milk, curry leaves and fresh coriander.

Contains: Peanuts and peanut products, Tree nuts and tree nut products other than coconut from the fruit of the palm, Coconut Milk

Food for me is synonymous with care, love and nourishment. Growing up in my home mum would tell us that always make enough food so that there is a little extra left. Cooking to me was always a creative outlet, a way to relax and especially because I love feeding people. It was something I did for fun. This curry is truly amazing … it’s the most authentic coconut based curry I have eaten in Sydney.

The best curry so far in this street.

This curry (also known as Kadala Curry) tastes so close to the curry we used to have at Kerala.
It is very very healthy - filled with protein and the chef has been extremely successful in making it delicious.
We are sure to see some more of the Malabar curries like Prawns curry and Avial!

PS:-
1) price is not that reasonable.
