Vegetable and Chicken Soup (Lower Carb)

This vegetable and chicken soup is loaded with vibrant vegetables, a chicken broth base and finished with some shredded chicken with a gentle kick of green chillies. It is a crowd pleaser which means the whole family will enjoy it even if they don't follow a low carb diet. This delicious soup has been part of my weekdays meals for months. It is so delicious, nurturing, healthy and comforting!

  • Preparation:
    Step 1 - Defrost in microwave or fridge overnight
    Step 2 - Microwave until hot (approx 8mins). Stir halfway through

    🥖 Best served with toasted bread

    Ingredients:
    Cauliflower, broccoli, red capsicum, onion, zucchini, tomatoes, celery, garlic, carrot, peas, corn, chicken, green chilli, parsley

Delicious light lunch

Beautifully spiced soup. 1L container served three for lunch (with bread roll on the side for those not wanting low carb).
