Flambe Chicken

A Brazilian version of the famous shepherd's pie, using chicken thighs fillets cooked and flambéd in dry sherry, and vegetables cooked in tomato and soy sauce. All topped with a creamy sweet potato and lower carb potato mash.
Just like the shepherd's pie, the Brazilian version can have a large number of variations with different filings and so on. This one is my favourite variation and comes from Brazil's Northeast region.

  • Preparation (cook from frozen):
    Step 1 - Preheat Oven 180°C
    Step 2 - Remove lid, cover with foil
    Step 2 - Bake 50mins (Single) to 65mins (Double)

    🥦 Best served with a fresh side salad

    Ingredients:
    Chicken thighs fillets, olive oil, dry sherry, onions , mushrooms, red capsicum, tomatoes, soy sauce, parsley, sweet potato, lower carbs potatoes, skim milk, butter, salt and pepper.

    Contains: Milk and milk products, Soybeans and soybean products

The only problem with this dish is that (despite the generous size) we still should have ordered double!
