It's a technique built for barramundi specifically: a fish that can turn dry quickly under heat, but stays moist and full of flavour when it's given nowhere to escape.

"I love barramundi because it's a fish that doesn't easily become dried after cooked, and this special way to cook al cartoccio (closed in baking paper) is enhancing the spices that are in the chermoula and are cooked with," says Davide. It's more than a weeknight dish for him, this recipe has become a must at his family's Christmas feast, and it's easy to see why once you've had it.

Made with ❤️ by Davide

The roast that turns Christmas lunch into something to remember.

Paolo takes a whole leg of lamb, debones it, rolls it and marinates it in olive oil, lemon, parsley, rosemary and oregano with a touch of mild mustard, the kind of simple, herb-forward marinade that lets good lamb speak for itself. It arrives raw and marinated, ready to go straight into your own oven, so there is no deboning, no rolling and no marinating left to do on your end.

Deboned and rolled is the part worth having. A leg with the bone in makes you carve around it, this one carves in even rounds from one end to the other, so everybody gets the same piece and there is very little waste. Roast it at 180°C until a thermometer in the thickest part reads 58 to 60°C, take the netting off, then rest it for twenty minutes before you carve. Pink and juicy the whole way through.

Serves four to six. It is built for the big table moment, whether that is a regular Sunday roast or the centrepiece of Christmas lunch, when the last thing you want to be doing is prepping a roast from scratch. Lovely with a potato bake and a green salad you make alongside it, and very good cold the next day.

Prepared with ❤️ by Paolo

Mudgee ham, glazed dark with native Davidson plum and honey, sweet, tart and sticky enough to need a napkin.

If there is one dish that is not negotiable at an Australian Christmas, it is the ham. And glazing it is the one piece of Christmas cooking most people actually want to do, so we have done everything except that. The ham is a 3.5kg leg from Mudgee Meat, skinned and scored by hand and ready for the oven. The glaze is made in our kitchen and comes with it. You brush, you bake, you baste it once or twice, and you carry it out yourself.

The glaze is built rather than poured. Davidson plum purée for a deep, tart, almost damson-like sharpness that cuts the richness of the meat in a way brown sugar alone never manages, honey and brown sugar for the dark sticky edges, Dijon for a mustard sharpness underneath, and warm spices through it including native Cinnamon Myrtle. As it bakes it reduces onto the scored skin and sets to a lacquer, sweet, sharp and savoury in the same mouthful.

There is a reason we have left this part to you. A ham glazed in your own oven looks the way a glazed ham is supposed to look, dark and glossy and just caught at the edges, and it fills the house with the smell of Christmas morning while you are doing something else entirely. A ham glazed in ours and reheated in yours would never be the same thing.

A ham this size serves a crowd as part of a spread, and generously eight if it is the centre of the table. It is just as good cold on Boxing Day as warm on the day itself, and the leftovers are, frankly, the point.

Davidson plum is an Aboriginal food, gathered and eaten in the rainforests of northern New South Wales and Queensland long before it reached a kitchen like ours, and it is the single best argument that an Australian Christmas does not need a European glaze.

We've partnered with Mudgee Meats to source the most delicious hams, who take pride in sourcing products from farmer partners who share their commitment to hormone-free, ethically-farmed, grass-fed and free-range produce.

Two lobster tails, split and ready, under a fragrant lemon myrtle butter with native finger lime, no cracking, no picking, no tools.

Lobster is the dish nobody expects to be easy. These are full tails, split down the middle and already prepared, so there's no cracking, no picking and no tools on the table, just open shells with the butter pooled in the meat. Move them from the freezer to the fridge the night before, bake them until the butter is bubbling and glossy, and put them down in the middle of the table where they will do all the talking.

The butter is built on lemon myrtle, an Australian native leaf that smells more like lemon than lemon does, sharper and rounder at once, and it was made for seafood. Over the top goes finger lime, the native citrus that grows in the rainforests of northern New South Wales and southern Queensland, dried and ground so the fragrance concentrates. A little goes a long way. Together they do what a wedge of lemon does at a seafood lunch, except they do it through the whole dish, and they taste like nowhere else on earth.

Both are Aboriginal foods.
