Rani's Lime and Chilli Chicken Curry

This full-flavoured, rich chicken curry differs from others due to the balance of spices and the addition of lime leaves in the paste, along with a squeeze of lime at the end of cooking. The sauce is wonderfully light, and while a bit on the spicy side, is delicious on the tongue, the chilli heat tempered by the lime juice.

The dish is inspired by the Thai Panang curries popular in the north of Malaysia where the influence of neighbouring Thailand crosses with the traditional Malay dishes.

Ingredients ‚Äď Chicken thighs, coconut cream,¬†lime¬†leaves,¬†lime¬†juice, cherry tomatoes, lemongrass, turmeric, garlic, onions, chillies, sugar, stock, fish sauce & vinegar.

Reheating Instructions: Defrost overnight in the fridge or by using the defrost function on the microwave. Reheat until piping hot.
